Madeleines with rocket

30 g of almond flour
20 g of grated Parmesan cheese
20 g of rocket leaves

2 eggs
50 ml of olive oil
8 g ​​of instant yeast for savory pies
¼ teaspoon of salt


First, wash the rocket leaves well and dry them with a clean cloth. Blend the leaves with the oil with the help of a blender or immersion mixer until you get a homogeneous mixture.

In a bowl, combine the 0 flour sifted with the yeast, the almond flour, the Parmesan cheese and the salt, add the hand-beaten eggs and the rocket blended with the oil, mix. Transfer the plastic-coated bowl to the refrigerator for at least 30 minutes ( rest in the refrigerator is important in order to obtain the typical hump that characterizes them )

Transfer the mixture into the previously buttered and floured madeleines mold with the help of a teaspoon.

Bake at 180 ° C in a preheated oven and cook for about 10/15 minutes
