How is the real Burrata di Andria PGI made?

The expert hands of the dairymen do something magic: there is a specific procedure for creating the Burrata di Andria PGI, which the masters of flavour of Caseificio Montrone know well and follow meticulously.

First, the Stracciatella is made by fraying the spun paste in an irregular way and dipping it in the cream. Then the cheese pouch that envelops it takes shape: strong, resistant and ready to be filled and tied with raffia.

This is how the famous “testa” is obtained, a distinctive feature of the authentic Burrata di Andria PGI: it is precisely this typical closure at the top that ensures the artisanal production of the burrata, prepared to perfection by the Montrone dairymen.

Some history: how Burrata di Andria PGI was born.

Behind every great invention there is a good story: that of Burrata di Andria PGI linked to the name of Lorenzo Bianchino. This was the name of dairyman from Andria who, during a long snowfall that prevented the transport of milk to the city, had the idea of creating an original product.

Here’s the idea: to create a pouch of spun paste in which to wrap strands of mozzarella dipped in cream, to preserve them better.

The cheesemaker filled the pouch and created the characteristic apical shape that everyone knows. Since then, Burrata di Andria PGI has been one of the finest dairy products made in Apulia.

The Consortium for the Protection of Burrata di Andria PGI

Like any self-respecting excellence, the Burrata di Andria has received a prestigious recognition: that of a product with an origin mark. Since 2016, the Burrata has become a Protected Geographical Indication (PGI).

After almost a century since the birth of the most delicious fresh cheese, on 17th February 2017 the Consortium for the Protection of Burrata di Andria I.G.P. was established with the aim of protecting and promoting the real Burrata di Andria.

The Caseificio Montrone of Andria, as a member of the Consortium for the Protection of Burrata di Andria PGI, carries on the Andria dairy tradition, promoting Burrata di Andria PGI throughout Italy, as defined by the production specifications. In other words, with Montrone, goodness is guaranteed.
