Fresh cheese towers with chopped rocket and tomato

Ingredients
▹ 2 twigs of Montrone fresh cheese
▹ 300 g of cherry tomatoes
▹ 100 g rocket
▹ 1 clove of garlic
▹ Coarse
salt▹ Extra virgin olive
oil▹ Salt and pepper
Preparation
Cut a third of the weight of the tomatoes in half and place them in a baking dish together with the rest that you will leave whole. Add the poached garlic, salt and oil. Bake for 20 minutes at 170° C.
In the meantime, place the rocket in a mortar, add a few grains of coarse salt and start pounding. Now add the tomatoes and reduce everything to cream.
Cut the fresh cheese into thin slices and start layering, putting a slice of cheese at the base, and a spoonful of chopped meat together with a few rocket leaves, complete the three layers and add a roasted tomato on top. Finish with a drizzle of oil and pepper.
Tips
If you don’t have a mortar, you can use an immersion blender.
