Pasta and potatoes with smoked burratina

Ingredients
▹ 1 Montrone smoked burratina
▹ 300 g of mixed pasta
▹ 3 medium potatoes
▹ 1 Carrot
▹ 1 celery stalk
▹ Extra virgin olive
oil▹ Salt and pepper
▹ Rosemary
Preparation
Make a base of sautéed celery and carrot and put them in a saucepan with oil to soften them. Cut the potatoes into cubes and add them to the sauté, brown for a few minutes, then add twice the volume of hot salted water and cook for up to 5-10 minutes.
Add the pasta and if necessary additional hot water. Cook for the necessary time. The water should be reduced but not completely dry.
Once cooked, add a part of the burrata that you have previously shredded. Stir off the heat and then portion into serving dishes. Add a small potion of burrata with chopped rosemary, pepper and a drizzle of oil. Serve hot.
