PRODUCT DEFINITION

A bag of soft mozzarella with a surprise inside: a soft and enveloping heart of stracciatella. This is the secret of the Burrata di Andria I.G.P. from Montrone Dairy, a fresh cheese with a delicious filling.

Its round and cozy shape hosts the famous “sfilacci” of spun pasta dipped in cream. But the distinguishing feature of the authentic Burrata di Andria I.G.P. is the typical head, which emphasizes its artisanal production.

Like any true excellence, the Burrata di Andria has also obtained the prestigious recognition of a product with a mark of origin. In 2016, Burrata became a Protected Geographical Indication (PGI), protected by the Consortium for the Protection of Burrata di Andria I.G.P.

The Montrone dairy in Andria, a member of the Consortium, is the spokesman for the Andrian cheese tradition, to preserve intact the Burrata and enhance the meticulous work of the master dairymen, Artigiani del Sapore.

*Citric acid is widespread in nature and occurs naturally in milk. It is used in the production of Burrata, as a substitute for milk enzymes, to enhance the sweet taste of fresh milk.
