HOW IT COMES ABOUT

Behind every great invention there is a good story: that of Burrata di Andria P.G.I. linked to the name of Lorenzo Bianchino. That was the name of the Andrian cheesemaker who, during a long snowfall that prevented the transport of milk to the city, thought of creating an ingenious product.

Here’s the idea: create a bag of spun paste in which to enclose mozzarella strands dipped in cream, to preserve it as best as possible.

The cheesemaker filled the casing and gave birth to the characteristic apical shape we all know. Since then, Burrata di Andria P.G.I. has been one of the finest dairy products made in Puglia.

The Consortium

Like any self-respecting excellence, Burrata di Andria has also obtained a prestigious recognition: that of a trademarked product. In fact, in 2016, Burrata became a Protected Geographical Indication (PGI).

After nearly a century since the birth of the most mouth-watering of fresh cheeses, the Consorzio Tutela Burrata di Andria I.G.P. was established on Feb. 17, 2017, with the aim of protecting and promoting the real Andria burrata.
